The Frantoio Oleario Cassese, owned by Mr. Giovanni Cassese, has been operating for four generations in the Villa Castelli area, producing an excellent quality extra virgin olive oil and twenty-four different types of flavored oil to be used as a condiment. The company has for years been prestigiously present in the Apulian olive oil scene, but also nationally and internationally. The Cassese oil mill is mainly characterized by the particular method of processing the product, which is based on the very short and strictly controlled times between harvesting with high-tech machines and cold pressing, which never exceeds 8 hours between one operating phase and another. Particular attention is then paid by the Cassese Company to the oil conservation method, which takes place through the rigorous use of underground stainless steel tanks, to guarantee the conservation and exaltation of the organoleptic properties of the extra virgin oil produced.
